We recently celebrated Mother’s Day in England and for my mother I cooked a Chinese inspired meal with lots of different dishes. Some I’ve cooked before, like Stir Fried Beef with Ginger. Alongside the meat and fish dishes, I made a fresh and crunchy salad, inspired by one in my Gok Wan Cooks book. Sadly, there were very few leftovers the next day, and none at all of the salad!
Ingredients to serve 4-6
- 1 cucumber, partly peeled
- ½ fresh chilli, finely sliced
- 3 spring onions, finely sliced
- A few handfuls of bean sprouts
- 3 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon fish sauce
- 1 teaspoon soy sauce
- 1 teaspoon caster sugar
- A pinch of salt
Slice off the ends of the cucumber then slice it in half lengthways. Scoop out the seeds with a teaspoon and then cut the cucumber into chunks about .5cm wide.
Mix the cucumber with the chilli, beansprouts and spring onions. Mix the rest of the ingredients together to make the dressing and pour over the salad a couple of minutes before serving.

Me too – although there were Singapore Noodles left over and I had them for breakfast the next day which Big Man found a bit traumatic as he tucked into coffee and magdalenas 😉

Nope, not really warm enough for salad but I put lots of hot chilli and ginger into everything so they were all glad of a refreshing salad 😉 Cunning cooking!

Lovely, lovely salad and have to check our respective ingredients! Don’t think the season of the year has much to do with the recipe!! SE Asia actually has a lot of salad recipes [whether it is always safe to eat them at street stalls is another matter 🙂 !] . . . besides this one methinks I love the green papaya one the most and make it most weeks . . .

That looks so good!!! I’ve posted on a cucumber salad, but it doesn’t have the bean sprouts included. There’s a little sugar and Tabasco, and it’s fabulous as well! You are a very nice daughter!

I think with this lovely dressing you could substitute anything you fancy for the beansprouts!

A beautiful set of flavors with soy and rice vinegar…they manage to keep the vegetables looking yum and crisp to the bite:) Amazing salad – so simple too!
It was amazing how beautiful it tasted, considering the simplicity of the ingredients!

Mistress have you ever been to Indonesia?, in Indonesia there is also a salad in peanut sauce, sprinkle the name gado gado,karedok and do you want to taste it ?

If in Indonesia called oseng2 bean sprouts. the menu is almost the same. I guess only in Indonesia alone menu like that, it turns out in the UK as well there ya?
