Spicy Cucumber Salad

We recently celebrated Mother’s Day in England and for my mother I cooked a Chinese inspired meal with lots of different dishes. Some I’ve cooked before, like Stir Fried Beef with Ginger. Alongside the meat and fish dishes, I made a fresh and crunchy salad, inspired by one in my Gok Wan Cooks book. Sadly, there were very few leftovers the next day, and none at all of the salad!

Chinese Feast 003

Ingredients to serve 4-6

  • 1 cucumber, partly peeled
  • ½ fresh chilli, finely sliced
  • 3 spring onions, finely sliced
  • A few handfuls of bean sprouts
  • 3 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon fish sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon caster sugar
  • A pinch of salt

Slice off the ends of the cucumber then slice it in half lengthways. Scoop out the seeds with a teaspoon and then cut the cucumber into chunks about .5cm wide.

Mix the cucumber with the chilli, beansprouts and spring onions. Mix the rest of the ingredients together to make the dressing and pour over the salad a couple of minutes before serving.

  1. Happy mommy’s day to your mommy and how lovely to be able to share the day with her and with a magnificent meal to boot.
    Love the salad!
    Have a beautiful weekend Tanya.
    🙂 Mandy xo
PS. Hope you were able to see the eclipse.

    1. Me too – although there were Singapore Noodles left over and I had them for breakfast the next day which Big Man found a bit traumatic as he tucked into coffee and magdalenas 😉

      1. Oh, no! 😦 I tried to share you on PInterest but it was too hard so I gave up and used FB. I have a PInterest account but not a very active one.

  2. Gorgeous salad Ms Chica. Is it really warm enough over there for salad?! Happy mothers day to your wonderful mum. Without her, you wouldn’t be “you” and the world wouldn’t be as bright 🙂

    1. Nope, not really warm enough for salad but I put lots of hot chilli and ginger into everything so they were all glad of a refreshing salad 😉 Cunning cooking!

  3. Lovely, lovely salad and have to check our respective ingredients! Don’t think the season of the year has much to do with the recipe!! SE Asia actually has a lot of salad recipes [whether it is always safe to eat them at street stalls is another matter 🙂 !] . . . besides this one methinks I love the green papaya one the most and make it most weeks . . .

  4. That looks so good!!! I’ve posted on a cucumber salad, but it doesn’t have the bean sprouts included. There’s a little sugar and Tabasco, and it’s fabulous as well! You are a very nice daughter!

  5. Oh this sounds gooooood! (and , no water required ;-)) Always very happy to have a good salad idea for those long Texas summers. Mmmmmmm!
