Where did January go?!

Normally a quiet month, a little flat after the excesses of Christmas. Not so here, it seems to have been busy and bright….and I’m not complaining.

We have been pretty good about eating lighter, and eating less meat, but I have turned to an old standby favourite this month. Tray baked chicken  (although I used an oven dish!).

It’s a quick dish to throw together using whatever is nestled in the fridge and although I mostly use skinned, bone-in chicken joints, it’s great with fish fillets or just veggies.

Peel and chop potatoes into large pieces, add vegetables like peppers, courgettes, tomatoes, carrots and a full head of garlic. I haven’t given quantities as this dish is great for one, two or a dozen people. Just judge how much your crowd will eat, add a little extra as they will always want to go back for more, and find an oven dish or tray to fit the quantity.  Put all the ingredients into the dish, preheat the oven to about 180 degrees.  Pour over some olive oil, season with coarse sea salt and freshly ground pepper then customise any other seasoning to whatever takes your fancy. This time I used some dried oregano from our garden in Spain, a little smoked pimentón and half a finely chopped lemon.

Mix together well, hands work best for this to ensure everything is well coated, and add a good slug of white wine,  stock or water.  Cover tightly with foil bake for about an hour then remove the foil and bake for about 20 minutes more until everything is starting to brown nicely. If you want to add some tender vegetables (I used some chopped kale) stir into the dish about 10 minutes before you’re finished. Then it’s  straight to the table, perfect one pot cooking!

We’ve been enjoying the winter sunshine and taking walks along Bexhill beach.  Then a quick trip across the channel to stock up on wine (stocks were dangerously low) and a lovely night in Le Touqet were enjoyed last weekend.

And little Alfi,  one of our pups, has started on a course of hydrotherapy to build up his leg muscles after an operation on his hind leg in November to repair a damaged cruciate ligament.

He’s not a water loving dog so is highly unimpressed with being put into a warm pool then shampooed and blow dried afterwards. I’d be delighted at the opportunity of such pampering but there’s just no pleasing some pups….!

I’ve been cooking and have some recipes to share with you soon, but in the meantime, enjoy the last few days of the month.

Autumn Days and Autumn Nights – Apple and Blackberry Pudding

The days are getting shorter, the sun still shines most of the time but not with the intensity of summer. The air smells different, fresher, more invigorating. It’s time to finish off doing things you meant to do in summer and plan for the next few months.

Time to enjoy autumn fruits like prickly pears…

Big Man and I haven’t had the great summer we had hoped for in Spain this year. That’s the way life goes sometimes. You just have to accept it and move on.  We hadn’t had a single chance to go to the beach, so at the end of last week we made it happen. Granted, we didn’t get down there until lunch time, but luck was on our side and a beachfront table at one of our favourite Chiringuitos (beach restaurants) became available as we arrived.

Perfect, time to relax with a bottle of chilled white wine, a mix of deep fried fish and some peppers and a plate of little pieces of grilled monkfish.

After a reviving coffee it was time for a gentle snooze down by the sea, listening to the waves and the distant sounds of murmered conversations.

What a difference a day makes, the next day Up the Mountain was grey and misty with low clouds lurking around the house.

A day that made me wish the blackberries here were still going strong, as they had been in England. A little bag of about 2 cups of blackberries had been picked on a seaside walk in England Down by the Sea and turned into a delicious autumn pudding.

Apple and Blackberry Pudding

  • 2 cups of blackberries (approx.) washed, two small apples peeled and thinly sliced and both fruits mixed together and sprinkled with about 2 tablespoons of brown sugar
  • 1 cup of self raising flour, a pinch of salt and quarter of a cup of sugar mixed together in one bowl
  • 1 large egg, a teaspoon of vanilla essence, a quarter of a cup of oil and a quarter of a cup of natural yogurt beaten together until well mixed.

Add the dry ingredients to the wet and mix well, if the mixture is very stiff, add a tablespoon full of milk.

Mix the cake mix into the fruit and pour into an ovenproof dish. Bake at 180º for about 30 minutes or until a skewer poked into the centre of the pudding comes out clean and the top is slightly browned.

Serve with cream and/or ice cream whilst making sure your dog does not sneak up on you and pinch a mouthful.

Sunset over Marbella

Some of you may have noticed how quiet I´ve been for the last week.  Very unusual for me, and I can be quite loud and noisy “in the flesh” too!  We´ve been on another little break, all very last minute and enormous fun.

The village often organises trips through the Government of Andalucia for the older folk, or some of the Associations (or clubs) and one had been offered to our fellow villagers to stay in a holiday complex near Marbella on the Costa del Sol (also known as the Costa Del Golf or the Costa Del Crime because of some of the dodgy characters who make their life there in luxury penthouse pads!).

There were extra spaces, so Big Man and I were invited to join in, and we´re so glad we did. We were probably amongst the youngest in the group, but my goodness – have these Spanish retired folk got energy!  Dancing, walking, sports, swimming, golf, marathon card sessions and going to the beach were all part of a “relaxing” day for this group.

We had a ball, and got back today happy, relaxed, and having swum daily in the Mediterranean.  There was, unfortunately, no internet, so “normal blogging service” will be resumed soon, with possibly another break as I head off to London next Wednesday to see my family for 8 days.

Ok, am off to catch my breath, unpack and get ready to repack.  In the meantime, enjoy the view from our terrace every evening and a few of the places we went to visit while I catch up with all your lovely posts.
