Take One Bag of Flour

I don’t know who discovered that by grinding grains, flour could be produced. And whoever then went on to figure out that by adding simple ingredients like water and air, you could end up with a delicious loaf of sourdough bread. As for pasta, whoever had that great idea of adding an egg and a pinch of salt to make a beautiful silky dough….well, I raise my glass of wine to them.

Not really much of a recipe today, more an acknowledgement that good food doesn’t need to be complicated or sophisticated. Ingredients, as long as they are fresh and good can produce the most incredible tasting meals with just a little effort and time invested. Oh yes, and love. Good food needs to be made with love.

Lunch the other day was a homage to simple ingredients. Home made pappardelle (thick pasta as opposed to thin as the pasta cutting attachment on my machine has died, so I had to cut by hand) served with a (home grown vegetables) tomato and vegetable sauce with anchovies. Home made bread, dipped in our own olive oil and a glass of not home made wine. I’ll leave that to the experts!

Slow Cooked Vegetable Sauce with Anchovies (serves 2-4)

  • 3 cloves of crushed garlic
  • Half a courgette (zucchini) coarsely grated
  • One carrot peeled and coarsely grated
  • One stick of celery, finely chopped
  • Half a red pepper thinly sliced
  • 1 heaped tablespoon of tomato purée
  • 1 cup (or can) or chopped tomatoes
  • Olive oil
  • Seasoning
  • Herbs (I used basil)
  • A small glass of red wine
  • About 4-6 fillets of salted anchovies

Hand Cut Pasta

Start by slowly braising the garlic, courgette, celery, carrot and pepper (but don’t brown them) until they start to soften. Add the tomatoes, the purée, the wine and the herbs and bring to a gentle simmer. Season lightly and cook slowly for about an hour (or longer). If the sauce becomes too thick, add a splash of water. When nearly ready, remove the herbs if you have kept them whole and stir in the anchovies (leave these out if you want a vegetarian dish). Check for seasoning (you probably won’t need more salt) and serve.

Home Made Pasta

I use (per person as a main course) 100g strong plain flour, 1 egg, a tiny splash of olive oil and a tiny pinch of salt. Mix together by hand or in a machine and knead for a few minutes until the dough becomes soft and silky. Leave to rest for 30 minutes. Check out Chgo John’s excellent recipe for more tips and help.

While we’ve been in the UK we’ve missed eating our own home reared chicken, but we have 2 fantastic butchers nearby and are able to buy organic chicken and eggs too. A luxury, but I’d rather eat meat less often and enjoy good quality, properly reared meat that hasn’t been pumped full of chemicals.  I often buy a whole chicken which gives me more options…roast, soup, portions to freeze and eat later.

I had been saving our favourite part of the chicken which is the thigh.  I much prefer dark meat and when it’s cooked with the bone and skin, the flavour is better. In my humble opinion at least! Big Man is happy to eat chicken simply grilled or roasted, I enjoy extra flavours or sauces, so this was a dish to keep us both happy as I cooked the chicken in the base for the sauce, then served it on the side when the dish was complete. Having said that, I think he ate his share!

Ingredients (to serve 4)

  • 8 chicken thighs (or your favourite joints)
  • 2 glasses of white wine (plus one for the chef). Use chicken stock or water if you don’t cook with alcohol
  • 2 tablespoons of honey
  • 1 – 2 heaped teaspoons of English Mustard (according to taste)
  • 2 cloves of crushed garlic
  • Salt & Pepper
  • 1 level teaspoon of cornflour

Season the chicken with salt and pepper and put into a deep baking tin. Mix together all the other ingredients (except the cornflour) and pour over the chicken. If you have time, leave it for an hour or so before cooking, turning the meat in it once.

Cook at about 200 degrees (Gas 6 approx) for around 45 minutes, basting and turning the meat once or twice. Check that it’s cooked by piercing a thigh with a sharp knife to see that the juices run clear.

Drain the sauce off into a small pan and keep the chicken in a low oven while you finish the sauce. Add the cornflour to a few tablespoons of cold water, mix well and stir into the sauce. Heat gently until it thickens to your liking and serve with the chicken.

I made double the quantity and used the leftover chicken which I stir fried with courgette, bacon and mushrooms, then added the rest of the sauce and a little cream and served with pasta. Waste not, want not!

Staple Guns and Happy Accident Pasta

It’s been a busy old time here and writing has been virtually impossible. Floorboards are up, plumbing is going down, kitchen units have been delivered and it’s freezing cold. Oh well, I think we’ve got to the stage where it can’t possibly get any worse, just better, so onwards and upwards.

In between the mucky stuff, we’ve continued to eat well. Never fear, Chica and Big Man won’t fade away. I had planned one evening to make a carbonara but got home to find, shock horror, not an egg in the house. As we have no chickens here, I had to make do and ended up with what I call my Happy Accident pasta.

I fried some garlic and finely chopped onion then added a few rashers of finely chopped smoked streaky bacon and a handful of sliced mushrooms.

When the pasta was cooked I kept a little of the cooking water and stirred in the bacon and mushrooms plus a good dollop of crème fraiche, some finely chopped spinach and about half a cup of chopped up dolcelatte.

Result? Creamy, delicious, quick pasta but most definitely not carbonara.

Then it was back to work tidying up some dining chairs we bought second hand. Quite a traditional style but it will work in the house. The chairs had a regency stripe silk material covering them but it had seen better days…many bottoms had clearly sat on them and enjoyed countless meals around the table.

Giant Cous Cous with Red Peppers and Pomegranate Molasses

My new best friend, Yotam Ottolenghi, mentions giant cous cous (or Mograbieh) more than once in his cookbooks. I was keen to try it and surprised to come across it in a local supermarket.

Cooking instructions vary, I expect, from make to make but generally it seems to be cooked very much like pasta (i.e. boiled) and not like the traditional cous cous I am more familiar with.

I cooked mine in vegetable stock and left it quite “wet” when done, then mixed it with chopped roasted peppers, flaked almonds, some olive oil and lemon juice, salt & pepper and a tablespoon of pomegranate molasses.  I served mine with a grilled steak and some avocado. It was a great side dish. I think with other flavours or vegetables it would make a lovely vegetarian main or a filling salad dish.

Would I buy it again? In all honesty, unless it was on special offer, probably not, I think I’d rather have pasta or cous cous and not pasta type cous cous, but I’m glad I tried it.

Sopa de Picadillo – Chicken Soup Spanish Style

Cloudy is good, clear is bad!

The first time I ate a bowl of chicken soup in Spain, I was a little surprised by the way it looked. I was staying in my rented Cortijo in the middle of nowhere, with my lovely, crazy landlords living in the adjacent house and popping in on me at weekends to make sure I was fine. In true Spanish Mama style, my landlady often bought me things to eat, just to make sure I was going to stay nice and well rounded.

One lunchtime she came over with a bowl of chicken soup. I was surprised because in the UK a good chicken stock is clear, transparent…and highly valued for these attributes. What I had been presented with was cloudy, almost a yellowy white in colour. It smelt amazing and the bowl was packed full of other goodies too. Pieces of chicken, fine noodles, chopped hard boiled egg and jamon and some pieces of fresh mint. I was also instructed to squeeze lemon juice into my soup.  Then off she trotted, happy to have kept her (not so) starving tenant alive to see another sunny Andalucían day.

Of course, once I had tasted it, I was in love. Such deep chicken flavours, quite a salty (but not disagreeably so) taste and the tang of lemon and mint. The name of the soup, Picadillo, comes from the verb Picar. This means to chop finely or into small pieces. Hence the final additions of hard boiled egg and jamon.

This is not a recipe, more a method. Spanish chicken stock is made with whole joints of chicken (I use thighs and legs usually), salted pork bones and salted pork belly with plenty of fat on it.  If you can´t get the last two ingredients use a couple of pork ribs and a piece of normal pork belly or a thick slice of pancetta.  Add a couple of bay leaves, about 4 cloves, 1 or 2 dried chilies (optional) and cover with water. I also add in a few carrots and sticks of celery, but this is not typical. If you have not used salted bones, add salt to taste and check again at the end of cooking.

Now boil it fast for about 10 minutes, this is when the water will turn cloudy, then turn down the heat and simmer for at least an hour. Strain the stock and leave it to cool, you will then be able to remove the layer of natural fat from the meat which will set on the surface.

Remove the bones, bay leaves, cloves, chilies and discard. To serve a typical Sopa de Picadillo, boil up the stock, add some fine angel hair noodles and the chicken (pork belly too if you used unsalted)  and cook until the chicken is warmed through and the noodles are cooked. Sprinkle over hard boiled egg and jamon (or use lardons or pancetta) and if you have some fresh mint to infuse in the soup it really adds a special touch. Don´t forget the squeeze of lemon too!

Like most chicken soups, it is claimed to be the cure for all ills, but you don´t need to be feeling under the weather to enjoy it.

Gnocchi in a Creamy Asparagus Sauce

I have previously mentioned my love of potatoes, and being a big fan of carbs, a plate of gnocchi really hits the spot.  Today we´ll be using a packet of ready made gnocchi, as this is a speedy dish that looks gourmet, and we all like those.

The sauce is enough for four.  Of course, rather than save half for another day, we used it all and had our gnocchi swimming in a delicious creamy sauce.  Shame on us.

Ingredients

  • 1 packet gnocchi
  • 200ml of pouring or single cream
  • 2 tablespoons of milk
  • 1 bunch of asparagus
  • 2 tablespoons of soft blue cheese (optional but highly recommended)
  • Fresh parmesan for grating
  • Some chopped cooked lardons, bacon or jamon for sprinkling over the finished dish (or leave these out if you want to keep it vegetarian)
  • Seasoning

Start by finely chopping the asparagus, leaving the aside the tips.  Cook in salted water (not the tips) until tender and remove with a slotted spoon. Now cook the tips, drain and set aside, keeping warm if possible. You can always save the cooking liquid to add to vegetable stick or soup.

In a blender jug put the cream, milk, blue cheese (if using), asparagus (again, not those tips!) and plenty of black pepper.  Blitz until you have a smooth thick cream and put into a small saucepan.

Boil the water for your gnocchi, add salt, and cook until they float to the top.  While they are cooking, gently warm the cream sauce, taste and add salt if necessary.

When the gnocchi are done, drain and mix the cream sauce in, place into warmed serving dishes. Sprinkle over the asparagus tips and jamon or bacon (if using) and grate over some fresh parmesan.  Speedy, luxurious, delicious.

Speedy Pasta with Aubergine and Tomato Sauce

When I lived in London my life was, as you can imagine, very different from life Up The Mountain.  For a start I had a Proper Grown Up Job. And I travelled a lot, sometimes spending weeks living out of a suitcase or briefly stopping at home for a pit stop to repack the case.  At times like this my best friends were the local take away menus.  Luckily, I lived in an area that boasted an amazing amount of pretty good quality restaurants who could get something tasty to my doorstep within about 30 minutes of me placing a call.

When I moved to Spain, it took me a while to adjust to the fact that when I didn´t feel all that much like cooking it was either Big Man´s special fried eggs, or jamon, cheese and melon to eat. The nearest take aways or delivery services are, I imagine, in a town a 45 minute drive away.

Finally I realised that I could still have something tasty to eat in about the same amount of time as it would have taken me to decide what to order from the take away menu, make the call and wait for the delivery guy to show up.

This is one of my speedy suppers.  In the time it takes for a large pot of water to come to the boil and the pasta to cook, I have a delicious sauce made to serve with my favourite pasta, plenty of grated parmesan and I even get to swig a glass of wine while it´s cooking.  Well, I need a dash of wine for the sauce.

Per person you need half an aubergine finely diced, two cloves of crushed garlic, two medium tomatoes peeled and chopped, a large slug of wine, a tablespoon of chopped fresh herbs (I used a mixture of parsley and basil), seasoning and olive oil. I also use a crushed dried chili as I like my sauce spicy, but this is up to you.

Put the pot of water on to boil and sauté the aubergine until brown.  Now add the garlic and once it is softened add the tomato and seasoning and the chili if using.  Let the tomato cook down a little by which time you will probably be ready to put the pasta into the pot.  Add your wine and herbs to the sauce and let it bubble away gently until the pasta is cooked and ready to be drained. Taste and adjust the seasoning if necessary.

The sauce is a little like the one used in Pasta alla Norma  (ChgoJohn has a fine example of it here and Linda at Savouring Every Bite here).   These recipes give you a deeper tasting, richer sauce as it´s cooked for longer. Yum!

Now all you need to do is mix the sauce into the pasta, grate or shave over plenty of your favourite cheese, pour another glass of wine and think about how you are putting the fast food delivery services out of business.
