The Easiest Coffee Ice Cream You Will Ever Make

And probably one of the best tasting too! Christmas madness is starting to kick in around here. It will be a quiet but fun affair Chez Chica and Big Man – my parents are coming for Christmas so whilst it will be a small group, the food will still be cooked and enjoyed together, glasses will be raised to loved ones not with us, and of course silly hats will be worn.

As you know, Christmas tends to be quite a multicultural affair in our home. That way we get to enjoy the best of everything. Big Man is on his way back from a trip to Spain and hopefully his suitcase is full of tasty goodies from Andalucía. We’ll be eating Panettone on Christmas morning and after lunch we’ll hotly debate whether Turrón or Torrone is better. And in a change from the roast lamb or beef we generally eat, we’re going for Goose this year. Yum…it’s been a few years since I cooked one as they’re not so good for larger gatherings as although they have loads of flavour, you need to buy one the size of a bungalow to feed a crowd.

I’m making things that I know we’ll love (why wouldn’t I?!) and I know my mum, although not a big dessert eater, loves coffee flavoured ice cream. Big Man is of the opinion that a law should be passed to make it obligatory to eat ice cream every day and my dad and I will let them tuck in whilst we tuck into the cheese and nuts.

This is a Nigella Lawson recipe, and perfect for a last minute dessert if you don’t fancy making custard…

Ingredients (makes about a litre)

  • 600ml of double cream (heavy or whipping cream)
  • 1 tin of condensed milk (mine was 397g)
  • 4 tablespoons of instant espresso coffee powder

Whip all the ingredients together until thick and soft peaks are formed. Pour into your freezer proof container and freeze until solid. No churning, no whipping. Remove from the freezer a few minutes before you want to eat it to let it soften a little and enjoy. See, I told you it was easy!

We drove from England to Spain and arrived home late last night after a fairly slow journey through a cold, sleety and snowy France. Brrrr!

We´re a bit “Up in the Air” (and it´s not just because we´re back Up Our Mountain). We don´t know where we´re going to be for Christmas.

Maybe Spain, or maybe back to the UK to finish off House Number 2 and possibly take on some more work or help my parents out with various jobs.

No matter. We´re here right now. The sun is shining, the garden and the veggie plot have been tidied and prepared for winter.

The day started with good coffee, a walk around the garden snapping these quick shots and we´re off out for lunch! We are a happy Chica and Big Man. Well, we´re pretty much happy most of the time, but today we´re extra happy.

Coffee, Pear and Almond Cake

Some friends were coming over for “Merienda” which is afternoon tea in Spain, so it was a good opportunity to bake a cake. My Spanish pals do make me smile as when we get together for coffee and cakes, they always mention what a lovely English custom it is. I smile and agree, secretly thinking that I could probably count on the fingers of one hand the number of occasions I stopped for a proper afternoon tea when I lived in England. Oh well, I am certainly making up for it now.

This is a quick cake to pull together.  Sometimes it takes longer for the oven to warm up than it does for you to prepare the cake batter.

Ingredients (serves 10-12 slices)

  • One large pear, peeled, halved, quartered and then each quarter cut into three or four pieces
  • 1 ½ cups of self raising flour, ½ cup of ground almonds, a pinch of salt, a cup and a half of sugar all mixed together in a bowl
  • 3 large eggs, ½ a cup of vegetable oil, 1 teaspoon of almond essence, 2 shots of very strong cold espresso, half a cup of natural yogurt beaten together until well blended

Add the dry ingredients to the wet and mix gently with a wooden spoon. Using a large cake tin (mine was silicone, so no need to line but I sprayed with a little oil) line the base with the pear slices to form a circular pattern.

Pour over the cake better and smooth out the mixture.

Bake at 180ºC for about 50 minutes or until a skewer inserted into the middle comes out clean.

Leave to cool slightly before removing from the tin. Eat warm or cold. Keeps well for a few days – which is good as it is quite a large cake!

Flat Ruthie Ventures Up the Mountain – Strawberry Jam & Coffee and Baileys Ice Cream

For any eagle eyed readers out there, you may remember that Flat Ruthie of Cardboard Me Travels sneaked into my suitcase on a recent trip back from the UK.

While she was here she took the opportunity to do some sightseeing, so we didn´t see her for a while. However, it´s strawberry time here and as soon as she heard I had bought a few kilos of local strawberries, she finally joined me again.

Obviously, as we were going to be cooking, she insisted on a little apron, so I obliged.

We weighed out a kilo of washed, chopped strawberries then simmered them until slightly soft. Then we added a kilo of sugar, a sachet of pectin and the juice of half a lemon and boiled until setting point.

Ruthie stood back for a while as burning jam can be pretty dangerous but she was pleased to see how well it all turned out.

The next morning the sun shone brightly and I called her to join me for breakfast in the garden.

I think all her sightseeing must have worn her out as she stayed in bed and missed breakfast completely.

When she did eventually get up she decided she needed a good strong coffee to get her going.

No decaf in this house!

As I was making ice cream from Chgo John´s amazing recipe, she had the bright idea of replacing the pistachios I had wanted to use (but couldn´t find) with a shot of coffee.  I didn´t have half and half either so she explained to me that I could substitute a mix of both half whipping cream with half full fat milk for this part of the recipe.

Just as we were about to pour the ice cream mix into the machine she decided that about 100ml of Baileys would also be a good idea, so we put that in too.

After a little churning and a couple of hours in the freezer it was time to taste the ice cream. She took her pinny off to eat and her verdict was….mmmm, we´ll definitely make this again!

Finally I can take my pinny off and have a little break!

Home Sweet Home

We´re back from a hectic but wonderful week in London, catching up with family and friends.  We were wined and dined and thoroughly spoilt, drank far too much wine, walked for miles and laughed for the entire week.

We ate broccoli grown in my parent´s London garden.

Best friend Ria made us an amazing Chicken and Leek Pie, and extra marks to her for cooking it in her sister´s kitchen as her heating and hot water weren´t working for a few days.

We spent a day walking through London.

Of course, we stopped for coffee to revive us.

We drank good old British bitter.

We helped our pals Donna and Craig “christen” their new home in style.

Entertainment in their new home village, Lewes, was fun and quirky.

We even managed to spend a few days down on the south coast combining business with a little relaxation.  Of course, we had to take a romantic walk along the seafront at night when a sea fog was making everything look very atmospheric. We were in St Leonard´s on Sea, where my parents have a holiday place, and also home of Promenade Plantings.

We spent a wonderful day with my parents walking around beautiful Hampton Court, one of Henry VIII´s amazing Tudor Palaces.

And last night we arrived home, weary but happy.  Our case was packed with goodies….dressmaking patterns and fabric, antique carpentry tools, some vines from my father´s garden to plant here in Spain, salad seeds, a new mini baking tray… so much to look forward to.  And guess what?  When we unpacked, we found we had a stowaway.  Flat Ruthie has come to visit, so we´ll be enjoying some time with her very soon and cooking together!
