Solomillo Asado con Champiñones y Beicon – Roast Pork Fillet with Mushrooms and Bacon

Finally, back to the cooking. An easy recipe which looks like you´ve put lots of effort in and hours of work! This would also work well with pork loin or chicken breast.

You´ll need for 2 people (with leftovers which is always a good thing)

  • 1 pork fillet
  • A sprig of rosemary (discard after cooking)
  • About 10 mushrooms thinly sliced
  • 2 rashers of bacon finely chopped
  • ½ a medium onion finely chopped
  • 2 cloves of crushed garlic
  • Small glass of dry white wine or sherry
  • Seasoning
  • Olive Oil
  • Set the oven to about 180ºC (medium)

Put the pork fillet on a sheet of aluminium and rub in about 2 tablespoons of olive oil, and season all over with pepper and salt.  Tuck the rosemary spring under the meat and bring the aluminium up to create a basket for the meat, but don´t cover it completely.  This basket will save the cooking juices.

Put the meat onto a baking tray and into the oven and cook for about 30-40 minutes until the juices run clear when you put a skewer into the thickest part.  Remove from the oven, remove the rosemary, wrap the foil tightly round it and keep it warm for about 5 minutes to let it rest a little.

While the meat is cooking, put a few tablespoons of oil into a deep frying pan and cook the onion, garlic and bacon together gently until the onions are soft.  Add the mushrooms and a grind of pepper, stir over the heat until the mushrooms have all absorbed a little oil then add the wine and a few grinds of black pepper (no salt usually needed because of the saltiness of the bacon).  Put a lid on the pan and simmer gently for about 10 minutes or until the mushrooms are cooked and the liquid has reduced by about half.

Now pour in the meat juices and stir in.  At this point you could add a dash of cream if you fancy a creamy sauce.  Slice the meat and either pour the bacon and mushroom sauce over or serve separately.

Any leftovers of meat can be finely chopped, mixed with the mushrooms and bacon with a little cream and are delicious on pasta!

Apologies to my veggie pals and readers (you know who you are 🙂 ) this is an unashamedly porky plate with little room for adaptation but I hope you will understand and forgive….

Honey, Ginger and Soy Glazed Salmon

It’s summer and some days the weather turns warmer, hurrah!  Lighter, quicker to prepare dishes are firmly on the menu.

This is not an unusual dish, I am sure we all have variations of something similar in our repertoire, but sometimes it’s good to be reminded of ways of preparing dishes that we’ve loved and then forgotten.

Sticky Soy Salmon (3)

Ingredients (per person)

  • 1 salmon fillet (sustainably farmed if you can find it)
  • ½ teaspoon runny honey
  • 1 teaspoon of light soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons of rice vinegar
  • ¼ teaspoon finely chopped ginger (or grated)
  • ½ clove of crushed garlic

Mix all the marinade ingredients together and leave the salmon in it for at least 15 minutes but up to a few hours if you have time (remember to turn it over occasionally).

Drain then fry the fillets in a non stick pan (you won’t need any oil) for a couple of minutes each side until lightly browned. Remove from the pan and pour in any remaining marinade and cook quickly until it bubbles, pour this over the fish. I served this over a green salad packed full of gorgeous things like rocket and asparagus. A cheeky glass of white wine is most definitely recommended!

 

French beans, asparagus and mangetout with chopped almonds and lime

Another Ottolenghi inspired recipe – his calls for roasted chopped hazlenuts and orange. Hey, you do what you can with what you have on hand and “wow” it was so good!

This was a dish I took along to a barbecue but with a little grilled meat or some hard boiled eggs (for a vegetarian meal) would make a very delicious and satisfying light lunch or supper dish.

Ottolenghi Beans (1)

Ingredients (serves 4-6)

  • 400g of trimmed French beans chopped and lightly boiled
  • 400g mangetout lightly boiled
  • 1 bunch asparagus chopped and lightly boiled
  • 70g chopped or flaked almonds, dry toasted in a frying pan
  • 2 limes – zested and the juice squeezed out
  • 20g chopped parsley
  • 1 crushed garlic clove
  • 2 tbsp olive oil
  • Coarse sea salt and freshly ground black pepper

Simply mix together the lime zest, juice, olive oil and seasoning and add to the beans and mangetout. Sprinkle over the almonds, mix, taste and adjust the seasoning if necessary. Serve at room temperature.

 

Slovenly Strawberry Pie

A pal and commenter, Lynn, asked if I would be posting some strawberry recipes as we are smack bang in the middle of strawberry season….of course, am happy to oblige! Regular readers though will know that I am not much of a dessert maker (the ever expanding waistline does not permit too many treats) so I usually pull together dishes that are quick and easy but delicious enough to satisfy a sweet tooth. Strawberries are also so good right now, they don’t need too much mucking about with.

For anyone who also signed up for the “throw it together and see what happens dessert class”, this one’s for you.

Strwaberry Tart (3)

Ingredients (to serve 4-6)

  • 500g dessert pastry (I cheated and used ready made, but you can always make your own)
  • 600g fresh strawberries halved or quartered if very large
  • 1 heaped tbsp icing sugar
  • 1 level tbsp cornflour
  • Splash of fruit liqueur (I used framboise)
  • 1 beaten egg
  • Brown sugar

Mix the strawberries with the icing sugar, cornflour and liqueur and set aside while you roll the pastry out into a circle. Place the pastry onto an oven tray or into a tin, I used a deep paella pan which worked beautifully!

Pile the strawberries into the middle of the pastry circle then fold the extra pastry in over the top to form a bowl shape. Brush the top of the pastry with egg yolk and sprinkle over some brown sugar.

Bake at 180 degrees C for about 30 minutes or until the pastry is golden and the strawberries are bubbling. Allow to cool for about 15 minutes before serving – the cornflour will slightly thicken the juices. Serve with ice cream or cream whilst pretending to your impressed loved ones that it was really hard work to prepare.

Monkfish and Prawn Curry

Monkfish is an “oh so ugly but oh so good” fish. If you’ve ever seen it at the fishmonger before it’s been prepared it’s the one with the enormous gargoyle mouth and scary teeth and a body that looks a bit out of proportion with the head. It can also be an expensive fish, but like other luxuries such as fillet steak, you don’t need much.

Monkfish & Prawn Curry (1)

My lovely Bexhill fishmonger had some beautiful monkfish recently and I bought a tail. From this I made two separate meals for two people, so I really managed to make the most of it!

First up is a curry recipe I came across which I think is now going to be my “go to” curry recipe. It was so easy, it didn’t have a huge long list of ingredients and the flavour was amazing. If, like me, you’re a curry fan (and if you’re not, perhaps I can convert you – this one is about balancing delicate flavours rather than smacking you around the chops with burning hot chilli), do give this a try!

INGREDIENTS

  • About 250g monkfish cut into bite size pieces and about 10 raw, peeled langoustines or large prawns
  • The juice of two limes
  • Pinch of salt
  • 1 Tablespoon turmeric
  • 3 Tablespoons ghee or clarified butter (or use a light vegetable oil)
  • 1 onion finely chopped
  • 5 cloves garlic smashed into a fine paste
  • 2 inch piece of ginger smashed into a fine paste
  • 1 chilli pepper finely chopped
  • 1 chilli pepper halved
  • 1 Tablespoon cumin powder
  • 1 Tablespoon coriander powder
  • 12 cherry tomatoes – halved
  • 1 small bunch fresh coriander – finely chopped
  • 400ml coconut milk
  • Salt and pepper to taste

Method

Place the cubed monkfish and peeled prawns into a bowl with the lime juice, salt and turmeric. Allow to marinade for about 30 minutes.

In a large pan or wok, melt the fat or heat the oil. Add the chopped onions and fry until translucent and lightly browned. Now add the garlic and ginger pastes along with the chopped chilli pepper and fry for a couple of minutes.

Pour in the coconut milk and bring to a bubble then add the cumin and coriander powder and stir to combine then add the halved chilli. Finally, add the marinated monkfish, prawns and the tomatoes. Stir it all into the mixture. Allow the monkfish to cook gently in the sauce for about 5 minutes. Taste and season if necessary and sprinkle over the chopped coriander to serve. Perfect with plain boiled rice and/or naan bread.

Chorizo en vino con cebolla – Spicy Sausage with wine and onion

Chorizo in Spain is not like the chorizo you used to be able to buy in England – it was the hard, dry variety, rather like a little salami. In Spain chorizo is sold fresh – it looks like a bright red sausage and if you buy it at the butchers it’s sold in strings. You will be asked if you want it “fresco o seco” “fresh or dry”. The fresh variety is like a recently made sausage and is for cooking on the “plancha” or in a pan. The drier will have been made a few days or weeks previously and can be sliced and eaten as it is, in the same way as a salami.

It’s typical to buy a good supply and then hang some up for eating later and cook the fresh chorizo. I’ve noticed that in England, in some butchers at least, they are coming up with some wonderful and authentic tasting varieties of fresh chorizo, but if you can’t get hold of any, use your favourite sausage and add a little spicy pimentón to give it a warm Spanish taste.

This is a very typical dish served as tapas, with or without the addition of the onions. As we were still working our way through the onion glut, I did it with onions!

Ingredients (to serve as many as you like)

  • For every chorizo you cook, you’ll need about half a medium onion finely chopped and a splash of medium dry Spanish sherry

Slice each chorizo into 4-6 pieces and fry in a little olive oil until the outside is slightly charred. If you are lucky enough to have a terracotta cooking pot, use this as it really does add something special to the flavour.

Remove the chorizo and put to one side. Add the onions to the olive oil (and the chorizo will also have released some oil) and if you are using it, add a little pimentón. Fry the onions until they start to soften, but not caramelize and then add the wine. Cook until the liquid has almost completely disappeared and the onions are soft and coloured from the juices.  Add the chorizo back into the dish and cook for a couple of minutes more until warmed through.  Normally you won’t need any seasoning as the chorizo is highly spiced and salted, but check to taste and adjust if necessary.  Serve with a glass of ice cold fino and plenty of delicious bread.

Carrots with Cumin and Garlic Dressing

Well, the party’s over, the “Spanishes” have all gone home and fortunately Big Man and I walked miles and miles doing touristy things which helped burn off the excessive drinking/partying/eating calories which have been consumed over the last few weeks. I’ll share some photos of places we visited once I’m a bit more organised but for the moment it’s noses to the grindstone and back to renovations and a bit of healthy eating needs to be done.

Here’s another lovely, and very simple, recipe from the Moro Cookbook. In their version it´s billed as a salad and has coriander sprinkled over. I didn´t have coriander, so I made do! The dressing was fabulous and as I only made enough carrots for the two of us, there was plenty left over to dress a salad the next day.

Carrots with Cumin (3)

The Moro version cooks the carrots whole and then chops them when cooled but mine were too big to fit into the pan whole so I peeled and chopped them first.

Ingredients to serve 4

  • 450g carrots, peeled and thinly sliced
  • 2/3 teaspoon cumin seeds, dry fried
  • 1 garlic clove
  • Juice of ¾ lemon
  • Sea salt
  • 1/3 teaspoon caster sugar
  • 1 tablespoon olive oil
  • Some roughly chopped coriander

 

Cook the carrots in boiling salted water until tender, drain and leave to cool.

Pound the cumin in a mortar then add the garlic and ½ teaspoon of salt and continue to pound. Add the lemon juice, sugar and olive oil and mix before dressing the carrots with this delicious smokey, tangy dressing.

With her husband Steve and beautiful dogs Earl and Bezial they are based in Tasmania and living a life which is as self-sufficient as possible. Miss narf is vegan and I’m not, but she makes wonderful comments on my posts (even those pork and beef laden ones!) and makes me laugh with her brilliant sense of humour. Do take the time to pay her a visit, you won’t regret it!

Pollo al Ajillo – Chicken with Garlic

Well, it’s been quiet around the blog for the last week or so. But for good reason. We’re in England with family visiting from Spain and we’ve been having a wonderful time doing family and tourist things, walking our feet off, talking our heads off and eating and drinking far more than is probably necessary…but such fun!  As a little reminder of Spain, here’s a Spanish dish which is equally good for an informal meal or a special event, Chicken with Garlic.

Ajo (the “j” is pronounced like the “ch” in the Scottish word Loch) means garlic and ajillo translates as “little garlic” which is ironic as this dish contains plenty of garlic! It’s a simple cooking technique which is used with various meats in Spain and is served as both a main dish and as a tapas (usually with the meat cut into bite sized pieces). Don’t let the simplicity of this dish trick you into believing it doesn’t taste special, it packs a lot of flavour and because it can be prepared ahead and in large quantities, it’s a fantastic dish for entertaining.

 

Pollo al Ajillo (1)

To serve 6 people

  • 1 whole chicken cut into joints (or use individual joints)
  • 1 head of garlic, about a third of the cloves peeled and cut into thin slices, the rest left in their paper skins
  • Olive oil
  • A glass of fino or white wine
  • A few sprigs of rosemary (optional)
  • Seasoning

Pollo al Ajillo (3)

Season the chicken then fry in a little oil until browned all over. Now add all the garlic, the rosemary and the wine, reduce to a gentle bubble and cover with a lid. Cook for about an hour (turning a couple of times during cooking) until the chicken is cooked through). Check the seasoning and adjust if necessary. Sprinkle with some chopped parsley and serve with plenty of bread to mop up the juices.

Fennel Scented Cauliflower with Griddled Sea Bream

No sooner did we get here than it’s time to head back to England. I’ll be sad to leave our beloved mountains again but work beckons and excitingly we’ll also be renovating a property for my parents close by.  We’ll all be round the corner from each other like one big Italian/Spanish family! My dad will even have space to store his beloved Vespa and to continue the family tradition of making their wine for the year with grapes imported from Italy. We have a celebration ahead with both my mum and Big Man reaching special birthdays within days of each other. Friends from Spain will be flying over to England to join us, so I’ll be able to share that with you.

The packing up of the car starts today and we head off on Thursday morning to drive through Spain, right up the middle past Madrid then over the border at Irun and – all going well – resting for the night in Bordeaux. The next day we continue up through France and cross from Calais to Dover by ferry and then a couple of hours later we’ll be in Bexhill. Just over 2200km – loaded with paella burners and pans for pals, cheeses, wines, sausages and of course Luna and Alfi. We definitely don’t travel light!

But today I have just a little time to look back on the last month in Spain and share another simple recipe which, for me, is full of one of the flavours of Andalucia- anis.

I’m one of those funny folk who love fennel and dill but can’t stand drinks like anis, pernod or raki. Use it in cooking though and it’s a whole other matter.

Anis is a popular drink here (sweet or dry) and is served with or without ice, or if you add a little slosh of it to coffee in the morning, it becomes a “Carajillo de Anis”. Most popular with all the old boys in the local bars to start their day! We always have a bottle of it at home but it’s one of those bottles that lurks around for ages getting a bit dusty.

After resuming my mountain walks with the pups I have found plenty of wild fennel to pick – here it’s mostly the feathery fronds that are enjoyed, but you can also use the young stems in the same way you would use fennel. This recipe uses whatever veggies you have to hand, it’s all about the delicate aniseed flavours. We enjoyed ours with a whole bream stuffed with wild fennel which we cooked on the cast iron griddle and drizzled with a few drops of anis once it was cooked.

Sea Bream with Cauliflower (4)

Ingredients (to serve 2 as a side dish)

  • Half a cooked cauliflower chopped into small pieces
  • A leek, cleaned and cut into thin slices
  • A mix of red and green pepper, finely diced
  • 2 cloves of crushed garlic
  • Half an onion finely chopped
  • About 2 tablespoons of finely chopped fennel and fronds
  • A tablespoon of anis flavoured liqueur
  • Salt and pepper
  • Olive oil

Heat a few tablespoons of olive oil in a deep frying pan or wok and add the onions and peppers.  Fry gently until they are very soft (this will take about 20 mins) then add the leeks, garlic, fennel and cauliflower. Continue to cook until the leeks have softened, season and add the liqueur. Cook for a further minute and serve.

This would also be delicious served as a vegetarian main course on it’s own or stirred through rice or pasta.

Know Your Onions – Onions Braised in Wine and Balsamic Vinegar

What a funny expression that is. I struggled to find a decent explanation for it, although we use the expression to mean “knowing a lot about a subject”. If anyone can enlighten me, I’d love to know more!

Over on the beautiful prairies of the Midwest of America, our very dear friend Celia goes along each year to a big swapping fiesta. She usually comes home with some exotic and adorable creature like a white peacock or beautiful Boo the dog. Here, swapping is rife but generally restricted to gluts of fruit and vegetables and also poultry and eggs. As we’re not around so much right now, we can’t offer much but our dear friends and neighbours are busy keeping us supplied with delicious goodies.

Yesterday Big Man said he was popping out to see a man about some onions, as you do, and this is what he came home with.

Cebollas (3)

A lot of onions. And we’re due to be heading back to England in about a week, so there’s no way we can pack them into the car…we’d be asphyxiated by onion fumes. Time to get creative with onion recipes. Well, there’s Up the Mountain Onion Soup, of course. And maybe a caramelised onion tart. How about something different? Memories of my godmother, who came from the north of Italy, near Venice, and her method of cooking tiny onions in balsamic vinegar inspired me. I’m not sure if it’s exactly her recipe, but the taste was very similar and definitely worth buying onions to make specially.

Ingredients

  • Onions
  • Balsamic Vinegar
  • Olive oil
  • White or red wine
  • Salt and pepper
  • A few stems of a hardy herb like oregano (or you could use thyme or rosemary)

Chop the tops and bottoms off the onions so that they will sit flat in a deep frying pan or saucepan. Season with salt and pepper, drizzle over the balsamic vinegar (I used about 2 tablespoons for approximately a dozen onions), the same quantity of olive oil and pour over a glass of wine. I used Vino del Terreno (this translates as Wine of the Earth or Terrain) which is a wine many of our neighbours produce, a little rough and slightly sweet but oh so good with salty food. Scatter over the herbs and cover tightly with a lid or foil.

Bring the pot to boiling point and then reduce to the lowest heat possible and cook gently, turning the onions once or twice, for about an hour. Just before serving, remove the lid and turn up the heat to reduce the delicious cooking liquid slightly. We ate these onions hot as a side dish but they would be delicious served at room temperature as a tapas or starter.

And just in case you don’t like wine but do like dogs (clearly not braised in wine and balsamic vinegar) here is a completely gratuitous shot of my pups Luna and Alfi hoping I don’t notice they are hogging the sofa.
