Huevos Revueltos con Gambas y Setas – Scrambled Eggs with Prawns and Mushrooms

This is a bit of a “non recipe” recipe, as scrambled eggs are not really so tricky to do.  And as for my photos of the end result – well, not so appealing.  I know that many of you out there can make them look creamy and gorgeous but it was a case of “snap ´em quick as we don´t want to eat cold, dried out scrambled eggs”. Sorry.

Funnily enough, these are such highly prized dishes here that scrambled eggs (in different variations) often appear on restaurant menus as starters and top chefs demonstrate the art of cooking them on TV cooking programmes.  I do find that a little odd, as scrambled eggs was the first thing I was “taught” to cook by Sister Sylvia in my convent school cookery lessons.  I had already been baking and making meals at home so was a little insulted when a tiny chain smoking nun who wore high heels and a very elaborate hair do told me off for not getting into the corners of the pan with my wooden spoon.

When I told her that round saucepans don´t have corners (and between us convent girls we all knew she bought cigarettes and sherry with our cookery money) a wary truce was established but, much to my family´s surprise, I loathed cookery lessons at school. I was quite a bratty and opnionated 13 year old as you can see…

So, I digress.  Back to a quick and tasty and very Spanish supper dish for two.

Ingredients

  • About a cup and half of mixed mushrooms (they sell very good bags of mixed frozen mushrooms here which, when defrosted, are perfect for this and other dishes)
  • A cup of peeled prawns (shrimp) – or keep it vegetarian by leaving these out
  • One clove of crushed garlic
  • Four eggs (free range if possible)
  • A splash of milk
  • Seasoning
  • Olive oil or butter for frying (we use oil and I sometimes stir in a knob of butter to the eggs at the end)
  • A heaped tablespoon of finely chopped parsley,

Beat the eggs, milk and seasoning together and put to one side.  Now slowly fry the garlic and mushrooms until the mushrooms have given off their juices and are tender. How long this takes will depend on your mushrooms. Now turn the heat up, add the prawns and stir fry until pink.

Keeping the heat at medium, add the eggs and scramble to your liking (don´t forget the corners!). When they are a few seconds away from being done, stir in the parsley and serve with crusty bread or toast and a glass of something gorgeous.

Orange, Almond and Raisin Cookies

I´m not a very sweet toothed person, but as soon as I decide to try and eat sensibly for a while to shift a couple of kilos, I find myself craving things I wouldn´t normally eat. Like cookies.

I came across a lovely recipe over at IamSimplyTia which I thought we be a perfect, not so naughty treat.  Of course, as soon as I set about making the cookies, I needed to adapt as I was short of some of the ingredients.

Here´s my adapted version for a guilt free but flavour packed snack.

Ingredients (makes 18 large cookies)

  • 2 mashed ripe bananas
  • ¼ cup of natural yogurt
  • ½ teaspoon of almond essence
  • ¾ cup of white sugar
  • 2 tablespoons of maple syrup
  • ½ teaspoon of salt
  • ½ teaspoon of ground cinnamon

Put all of the above ingredients into a large bowl and beat until well blended.

Now add

  • ¾ cup of self raising flour
  • 1 ½ cups of oats
  • ½ cup of raisins
  • ¼ cup of almond slices
  • the grated rind of half a large orange

Mix well with a wooden spoon and place the mixture in the fridge for 30 minutes. Meanwhile heat the oven to 180ºC and line 2 baking trays with ovenproof or silicon paper.

Place heaped tablespoons of the mixture on the baking trays and bake for about 25 minutes until lightly browned on top.  Leave to cool for fruity, nutty, crispy on the outside, chewy on the inside cookies.  Thanks for the inspiration Tia!

Becuase of the changes I made these are best eaten within 48 hours – but I don´t think that will be a problem, will it?!

Ginger Spiced Carrot and Split Pea Soup

Winter and soups go together. As do winter and colds and I´ve got one right now. Fortunately it´s not too bad, as I´m still cooking and enjoying my food. Shame really, as a day or two of fasting is probably no bad thing for me.

I fancied soup this morning but didn´t want to wait for hours for stock to simmer. Now that I´ve realised I can buy split yellow peas in our supermarket, I don´t even have to wait overnight for other legumes to soak before cooking.  They´re also super healthy, packed with protein and fibre and low in fat.  This means they fill you up without filling you out.

As my sense of taste and smell is a little dulled at the moment due to my cold, I decided to make a warming spicy soup to try and wake those senses up a little.

To serve 4 as a main course

  • 1 cup of split yellow peas (or you could use lentils) rinsed
  • 5 cups of water
  • 3 medium carrots, peeled and finely diced
  • 1 cup of minced tomatoes or conserva
  • 1 heaped tablespoon of tomato purée
  • 1 teaspoon of ground cumin
  • ½ teaspoon of chili powder
  • 1 piece of fresh ginger (about the size of your thumb) peeled and grated or use a teaspoon of dried ginger
  • 3 cloves of crushed garlic
  • Salt to taste (but do not add until the soup is cooked)

Put all the ingredients into a large saucepan, bring to the boil then cover and reduce to a simmer for about 30 minutes until the split peas and carrots are cooked.  Season to taste and either eat as is or purée with an immersion stick blender or in your regular blender.  It´s good with a dollop of creamy natural yogurt but I prefer a drizzle of olive oil, a squeeze of lemon juice and a sprinkle of extra cumin.  Serve piping hot, sitting by the fire.

Citrus, Avocado and Radish Salad

We love our citrus fruit here in Andalucía.  Our lemon tree, after 3 years, now keeps us well provided in lemons all year round.  We have planted 3 orange trees too, so in a year or two, we´ll be enjoying our own oranges.

In the meantime, we rely on the kindness of friends and neighbours who keep us well supplied in oranges from about November to March, which is when Andalucía is lit up in the colour orange.  Fields of orange trees are a delight to the eye, and so too are the city streets lined with the trees of bitter oranges which are destined for England and its world famous Orange Marmalade.  But more of marmalade another day.

I was inspired by a stunning recipe from Sawsan over at Chef in Disguise for a beautiful orange and avocado salad. Grilled fish was on the menu for lunch, but sadly I have no idea what it is called in English.  As it´s a fairly oily fish, I thought that the tangy flavours of a citrus salad would complement the fish perfectly.  I was right!

Ingredients for 2 people

  • 1 large pink grapefruit and 1 large orange peeled and cut into bite sized chunks
  • 1 ripe avocado peeled and cubed
  • Radish – our radishes here are HUGE so I only used one finely sliced, but use however much you like (or not)
  • Dressing:  any juices that run off the fruit as you peel them plus a teaspoon of lemon juice, the juice of an orange and twice the volume (of the citrus juices) of olive oil, a pinch of sugar if your orange is sour, half a teaspoon of mustard powder, a grind of pepper and a pinch of salt.

Mix up the salad ingredients gently or layer onto a plate.  Mix the dressing ingredients in a jar, taste and adjust seasoning if necessary and pour over the salad.  Any remaining dressing can be stored in the fridge for use another time.

So pretty, so tasty, and so good for you.

Split Pea & Squash Curry

Now that we seem to have caught up (vegetable-availability-wise) with everyone who was posting squash and pumpkin recipes back in the autumn, I am finally cooking lots of warming winter dishes which include this fantastic ingredient. Having said that, it´s not actually very cold here at the moment, but it is Janaury, so I feel justified in making wintery food.

Although we didn´t put on any extra kilos over Christmas, no one could ever accuse either me or Big Man of being under weight, so recipes which are healthier and packed with vegetables are perfect for us.

A mild flavoured curry was on my list – Big Man doesn´t like them hot, and I can always add a little dried chilli at the end to turn up the heat in my own portion.

Ingredients (to serve 4 as a hearty soup or more as a side dish)

  • 200g split yellow peas (the last of a stash bought over by visitors…so sad)
  • 500g squash peeled and cut into slices
  • 1 cup of tomato conserva or chopped tinned tomatoes
  • 1 onion peeled, halved and cut into thin slices
  • 1 head of garlic (you will be roasting this and only using half)
  • 2-3 cups of vegetable stock or water
  • 3 heaped teaspoons of your favourite curry mix (I usually make mine with ground turmeric, chilli, cumin, dried coriander, black pepper and cardamom seeds and then add a little fresh grated ginger when I cook)
  • 1 teaspoon of mustard seeds
  • 1 dried chilli crumbled (optional)
  • Oil for frying

Turn the oven onto a high setting and place the squash on a tray lined with foil. Sprinkle with salt and drizzle a little oil over.  Roast for about 30 minutes until soft and brown at the edges.  Put the garlic in at the same time, wrapped loosely in foil.

Start by dry frying the mustard seeds until they pop. Remove them from the pan. Add a little oil to your pan and fry the onion and garlic until they are soft, then add your curry powder and mustard seeds and fry until the lovely aromas start to come out, then add the split peas (or you could use lentils).  Now add the tomato conserva and 2 cups of the stock or water plus the crumbled chilli if using.

Cook gently until the split peas are almost soft (you may need to add more liquid, just keep an eye on them). Remove the squash and garlic from the oven and cut the squash into smaller bite sized chunks.  Add these to the split peas.  Pop half of the garlic cloves out of their skins and add to the curry. Mash the other half and cover with a little oil, it will keep for at least a week in the fridge and can be used in other dishes or dips.

Add a drop more liquid to the vegetables if necessary, cooking the curry for about 10 more minutes until everything is soft and cooked through.  You can mash some of the squash, garlic and split peas with the back of a wooden spoon, leaving some chunky.  Add salt, you´ll probably find it can take quite a lot, but the choice is yours. Eat as a thick soup or a side dish and it´s lovely served with rice or naan bread.

Delicious with a squeeze of lime juice and chopped coriander, but I didn´t have either of them so I just used lemon juice. If you like it even milder and more creamy, stir in a couple of big spoonfuls of thick creamy yogurt.

We had some leftovers, so the next day I added some more stock, yogurt and some finely chopped chard (you could use spinach, kale, cabbage) and warmed it through to make a delicious soup – I´m not sure which version I liked best!

Chocolate Refrigerator Cake

The Spanish love sweet things.  I don´t think I´m making too much of a generalization with that statement.  Not that they´re greedy, but a little cake or biscuit is always most welcomed with a strong cup of coffee at the end of a meal, or a big bowl of milky coffee if it´s the start of the day.

Dealing with preparations for our unexpected lunch for 12, I was lucky that I had already made some of Spree´s gorgeous Mexican Wedding Cookies for an earlier family meal. The recipe makes plenty, and they were hugely popular. The only change I made to these, as I was in a rush, was to grind all the nuts (I used almonds and walnuts) and not chop half of them.  Lovely, lovely little biscuits and I´ll definitely be making them again.

Another quick recipe which came to mind was for Chocolate Refrigerator cake.  I made this the night before our lunch party and cut the cake into small squares the next morning.  These went down well too, and it´s a good recipe to make with little children as you only need a (supervised) heat source for melting.

Here´s the way I made it, although you can chop and change (or even omit) the fruit/nut filling.

250g crushed digestive biscuits (graham crackers)
100g butter
2 tablespoons of golden syrup or honey
3 level tablespoons of cocoa powder
About half a cup of “filling” – I used the last of my drained boozy fruits and added the grated zest of one lemon and one orange

Melt the butter with the golden syrup and cocoa then add to the crushed biscuits and filling.  Mix well until everything is well coated. If you leave some large chunks of biscuit/cracker, you will have some pretty speckles in the finished “cake”.

Pour into a tin lined with cling film, flatten and press it with your finger tips then cover and refrigerate for a few hours or overnight until firm.

Cut into squares – it´s very rich so I tend to do “bite sized”. And that´s it. Doesn´t get much quicker or easier does it?!

Chunky Pumpkin and Vegetable Soup

Not so much a recipe as a prescription.  After the excesses of Christmas coupled with a bad stomach virus, it was time for a cleansing soup.

Like all the best soups it was made from whatever the fridge had available.  Having said that, we had some beautiful stock made from the carcass of one of our home bred chickens, a cabbage given to us by one of Big Man´s family and the star of the show, a beautiful Green Striped Cushaw Squash grown by Big Man´s lovely cousin Raphael.

Now, I´m not usually so knowledgeable about Squash (or should that be Squashes?) as I have even called it a pumpkin in the recipe title. It just so happened that Claire over at Promenade Plantings posted a gorgeous Winter Panzanella Salad recipe recently, and there showing off in a fabulous photo was MY pumpkin. Or squash.

I used about 400g of chopped squash, 2 medium potatoes peeled and cubed, 3 large carrots peeled and diced, an onion peeled and sliced, half a red pepper cut into chunks, 2 cloves of garlic peeled and thinly sliced and four large savoy cabbage leaves which I shredded finely. Along with the broth I also added a cup of tomato conserva. For a vegetarian version, use water or vegetable stock.

I sautéed the squash, carrots, pepper, onions and garlic for a few minutes in a little olive oil then seasoned with salt and pepper  and poured stock and tomato over to cover.  I bought it all to the boil and then reduced the heat to a simmer.  After about 10 minutes I added the potatoes and when the vegetables were all tender, I added the cabbage which I only cooked for a few minutes.

Instead of cheese or croutons, we served it with freshly squeezed lemon juice which gave it all a lovely lift.  Filling but comforting.  Perfect for a post Christmas detox. With a glass of wine of course!

Roscón de Reyes – The Cake of Kings

A final post on Festive Food from me here.  The Twelve Days of Christmas come to an end on Twelfth Night, the evening of 5th January.  Traditionally in Spain this was the night to bake your Roscón de Reyes to be eaten the next day, Epiphany, which celebrates the arrival of The Three Kings.

For the children of Spain this means polishing their shoes to be put outside, awaiting the arrival of the Kings to fill them with gifts.  I guess little gifts were the norm way back, although that has changed over time.  Naughty children were left Carbón, or coal….so get polishing and I hope you´ve all been good.

The Roscón is a light, brioche like sweet bread which is filled and covered with candied fruits and often split and filled with whipped cream or sweet custard.  Additionally it is traditional to bake or put into the cake a small trinket (it used to be a figure of the Christ child) and a dried bean.  The finder of the trinket in their slice was King for the day, and the finder of the bean had to pay for the cake!

This is the first year I´ve attempted to make a Roscón, but I was pretty pleased with the results.  I hope my neighbour is too as I am taking this over to her this afternoon as a little thank you in return for a huge basket of Persimmons she gave me.  Happy Epiphany to you all on 6th January!

Ingredients

  • 200g approx of sultanas, glacé cherries and candied peel, soaked in alcohol if desired (see my Boozy Fruits recipe)
  • 500g plain flour
  • 1 sachet of quick/easy blend yeast
  • 1 tsp salt
  • 150 ml milk
  • 100g softened butter
  • 100g caster sugar
  • Grated zest of one orange and one lemon
  • 1 tsp vanilla essence
  • 3 large eggs, beaten
  • To decorate – about 6 roughly crushed sugar cubes or 6 heaped teaspoons of sugar dampened with a few drops of water and thick slices of candied peel (see this excellent post on how to make your own over at Rufus´ Food and Spirits Guide) and some glacé cherries.  You will also need one beaten egg and 2 tablespoons of apricot jam diluted with a little water to glaze when the cake is baked.

Mix the flour, yeast and salt together. In a separate bowl beat the sugar, zests and butter until fluffy then gradually add the beaten egg, vanilla essence and milk.  It doesn´t matter if it curdles.  Now add the flour and knead to form a dough – if it is too dry, add a splash of milk.

Now add the fruits and knead for 5 minutes on a well floured surface with plenty of flour for your hands – things could get messy!  Put the dough into a bowl, cover and leave to double in size (about 2 hours).

Now knead again briefly and push a hole into the centre of the dough so that you can start to form a ring.  Imagine you are making a pizza doughnut with a hole in the middle.  When it is about the size of a large dinner plate, put it onto a lined baking sheet.  You can tuck the trinket/bean wrapped in foil under the cake now or put it into the cooled cake later if you are using. Note, next time I make one, I´ll make the hole in the middle larger as the dough rises quite a lot during baking.

Leave for about an hour until it has doubled in size and brush with beaten egg before pressing the candied fruit in around the top and sprinkling the sugar over.

Bake at 180º for about 45 minutes (check after 30 mins) and brush with the jam when it has cooled a little.  Leave to cool completely.  You can now serve it as it is or split it though the middle and fill with whipped cream or confectioner´s custard. Warning – this is a HUGE Roscón and will serve about 10-12 people.  It does keep for a few days, and if unfilled is also good sliced and toasted.

Festive Cantuccini or Biscotti

 

A final, final (promise) Festive Recipe before we move into the New Year.

I´m not sure why, but in our family, Biscotti were always called Cantuccini.  Maybe it´s because the words biscotto (singular) or biscotti (plural) in Italian mean biscuits (cookies) and could apply to any type at all.  I´m not sure.

Of course, now we make our own, and like many of you out there, we add our own special twists to appeal to the people we are giving them to, or the time of year, or depending on what is available.

I´ve made these Festive Cantuccini for the last few years at this time of year because there are so many beautiful dried fruits available and the spices, to me, evoke Christmas smells.  Of course, the fruits, nuts and spices can be changed to please you and your loved ones.

Delicious served with frothy coffee or Vin Santo for dipping.  Buon Appetito!

Ingredients

  • Heat oven to 180º or Gas 4 and line 2 flat baking trays with silicon or greaseproof paper
  • 350g plain flour plus 2tsp of bicarbonate of soda
  • 3tsp mixed spice
  • 250g brown sugar
  • 3 eggs, beaten
  • Grated zest of one large orange and one large lemon
  • About 200g of dried fruit (I used candied peel and dried cherries)
  • 100g nuts (I used whole blanched almonds)

Mix the dry ingredients in a bowl with the zest and then stir in the beaten egg with a broad knife initially and then your hands. Keep kneading even though it seems dry, it will come together.

Now add in the fruit and nuts and mix in well.  Divide the mixture into four and make a sausage shape out of each piece, about 30-40cm long. Put two on each baking sheet and bake for about 30 mins until firm.  It will spread out slightly but still be pale.

Leave them to cool slightly for about 10 mins, reduce the oven temperature to 120º/Gas 1. Cut diagonally into slices and put back on trays and into oven.  Continue to bake for about 30 minutes, turning half way through.

Can be stored in an airtight tin for up to one month (like they´ll last that long!).

Cranberry and Citrus Confit

I am till trying to squeeze in a few festive recipes before we leave the celebrations behind, I thought I would share this favourite with you.  It´s another Delia Smith recipe, tweaked as ever, but enjoyed not only at Christmas.  As it is reduced to a jam like consistency, it keeps in the fridge for about a month and can also be made later in the year using sour cherries or even dried (and reconstituted) apricots.  Wonderful with cold meats and pickles, or bangers and mash (if you know what that is!).

Ingredients

  • 500g red onions finely sliced (you can use white if red not available)
  • 2 gloves crushed garlic
  • 1 tablespoon white sugar
  • 2 tablespoons of olive oil
  • 1/4 cup of red or white wine vinegar
  • 150g (approx) of cranberries or other sour fruit
  • Grated zest and juice or an orange plus the zest of a lemon
  • Optional – ¼ teaspoon of crushed cardamom seeds
  • Salt & Pepper to season

Cook the onion, garlic and sugar slowly in the oil for about 10-15 minutes-  Allow to soften but not to brown.  Then add the rest of the ingredients, cover and simmer for 10-15 mins.  Remove the lid and reduce for a further 30 mins (approx) until the mixture is thick and jam like in texture.  Cool and place in a plastic container.  Serve at room temperature.

PS. This morning we planted our garlic. Tradition round here says it should be done around Christmas Eve, preferably when the moon is waning.  We´re a bit out of sorts what with Christmas, so they only went in today.  About 100 cloves, so fingers crossed that in about 4-5 months we´ll be harvesting!
