Monkfish and Prawn Curry

Monkfish is an “oh so ugly but oh so good” fish. If you’ve ever seen it at the fishmonger before it’s been prepared it’s the one with the enormous gargoyle mouth and scary teeth and a body that looks a bit out of proportion with the head. It can also be an expensive fish, but like other luxuries such as fillet steak, you don’t need much.

My lovely Bexhill fishmonger had some beautiful monkfish recently and I bought a tail. From this I made two separate meals for two people, so I really managed to make the most of it!

First up is a curry recipe I came across which I think is now going to be my “go to” curry recipe. It was so easy, it didn’t have a huge long list of ingredients and the flavour was amazing. If, like me, you’re a curry fan (and if you’re not, perhaps I can convert you – this one is about balancing delicate flavours rather than smacking you around the chops with burning hot chilli), do give this a try!

INGREDIENTS

  • About 250g monkfish cut into bite size pieces and about 10 raw, peeled langoustines or large prawns
  • The juice of two limes
  • Pinch of salt
  • 1 Tablespoon turmeric
  • 3 Tablespoons ghee or clarified butter (or use a light vegetable oil)
  • 1 onion finely chopped
  • 5 cloves garlic smashed into a fine paste
  • 2 inch piece of ginger smashed into a fine paste
  • 1 chilli pepper finely chopped
  • 1 chilli pepper halved
  • 1 Tablespoon cumin powder
  • 1 Tablespoon coriander powder
  • 12 cherry tomatoes – halved
  • 1 small bunch fresh coriander – finely chopped
  • 400ml coconut milk
  • Salt and pepper to taste

Method

Place the cubed monkfish and peeled prawns into a bowl with the lime juice, salt and turmeric. Allow to marinade for about 30 minutes.

In a large pan or wok, melt the fat or heat the oil. Add the chopped onions and fry until translucent and lightly browned. Now add the garlic and ginger pastes along with the chopped chilli pepper and fry for a couple of minutes.

Pour in the coconut milk and bring to a bubble then add the cumin and coriander powder and stir to combine then add the halved chilli. Finally, add the marinated monkfish, prawns and the tomatoes. Stir it all into the mixture. Allow the monkfish to cook gently in the sauce for about 5 minutes. Taste and season if necessary and sprinkle over the chopped coriander to serve. Perfect with plain boiled rice and/or naan bread.

Smoked Haddock and Prawn Chowder

Oh the deliciousness of a beautiful piece of perfectly smoked fish, haddock in this case, a dish I cooked in England before we headed back to Spain. Simple, quick to cook and oh so satisfying.

Smoked Haddock & Prawn Chowder (3)

Ingredients (to serve 2 as a main course or 4 as a starter)

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 600ml milk
  • 400ml fish stock (can be made with 1 Fish Stock cube)
  • 2 medium potatoes, peeled and finely diced
  • 450g traditionally smoked haddock fillet, skinned
  • 225g raw peeled prawns
  • About a cup of creamed sweetcorn (I used tinned corn which I blended with the stick blender)
  • Lemon juice, to taste
  • Freshly ground black pepper
  • 1tbsp fresh parsley, chopped

Heat the oil in a large heavy pan. Add the onion and cook gently for 10 minutes until soft. Add the milk and stock and bring to simmering point.

Add the potatoes and simmer for about 10 minutes or until they are soft. Keep the heat gentle as you do this.

Cut the haddock into bite-sized pieces and add to the pan. Cook very gently for 2 minutes, then add the prawns, creamed corn, lemon juice and pepper. Cook for a further 2-3 minutes, taste and season, stir in the parsley and serve.

Smoked Prawn and Smoked Bacon Chowder and a Down by the Sea Salad

I’ve just tried something new for the first time – it’s quite exciting at my age to do that! Nothing saucy or involving dressing up in latex…I’m talking food here of course. What else?!

Smoked prawns are what have got me all excited and giddy. Am I just late to the party or is this something new? I came across them in our little Down by the Sea fishmonger’s the other day and they are sold in the traditional measure for cooked prawns here – by the pint.

Of course, I had to try them and along with two cooked and dressed crabs I had a delicious salad in mind for supper. It was utterly delicious and with some homemade mayonnaise for the crab (some of which I turned into a Marie Rose sauce for dipping) and a balsamic vinaigrette for the salad and some new potatoes drizzled with olive oil it was a wonderful meal. But not really a recipe to impress you with.

I still had half a pint of prawns left (25 of them to be precise) so the next day I decided to make a kind for chowder for lunch. I don’t claim this to be a completely authentic chowder as I didn’t have any corn, so it’s more a cross between a chowder and the lovely soup from Scotland, Cullen Skink. Strange name, great soup.

Ingredients (to serve 2)

  • About 24 peeled prawns (smoked or plain)
  • 4 rashers of smoked streaky bacon, finely chopped
  • Half an onion finely chopped
  • 2 small sticks of celery, finely chopped
  • 3 tablespoons of plain flour
  • Half a litre of liquid (I used a mix of milk and fish stock made with the prawn shells)
  • 1 tablespoon of crème fraiche
  • A finely chopped spring onion
  • Olive oil
  • Salt and Pepper

Smoked Prawn & Bacon Chowder (2)

Gently fry the onion and celery in a little olive oil until it starts to soften then add the bacon and fry until it starts to crisp. Add the prawns and plain flour and cook gently for a few minutes. Add the stock/milk and bring slowly to a simmer. Cook for about 10 minutes, it will thicken. Taste and season if necessary. To serve stir in the crème fraiche and sprinkle over the spring onion.

One Dish, Two Ways. Trout and Prawns Go Asian and Mediterranean.

I have to confess, I’m not a fan of cooking different meals to accommodate different tastes. Maybe I’d have been a horrible mum if I’d had children. I can imagine them all demanding their favourite meals and me refusing point blank and screaming something along the lines of “this is not an a la carte restaurant you know”. But sometimes, just sometimes, I go all contrary and make something different for me and Big Man. As long as it doesn’t involve anything too stressful in terms of extra work.

We were in the mood for fish and I had bought some gorgeous trout steaks and langoustines from the fishmonger. Having made a recent trip to a wonderful Chinese Supermarket I had been dreaming all day of oriental flavours. Big Man was coming down with a cold and feeling in need of a taste of home. No problem – this was an easy fix and we would both be happy.

Asian Style Dish

  • 1 trout steak and 2 large langoustines marinated for 30 minutes in a little freshly grated ginger, a large clove of crushed garlic, a tablespoon of soy sauce, a teaspoon of sesame oil and a splash of fish sauce

Mediterranean Style Dish

  • 1 trout steak and 2 large tiger prawns/langoustines marinated for 30 minutes in the grated zest of half a lemon, the juice of half a lemon and a tablespoon of olive oil

Both dishes

  • Steamed pak choi and sautéed sliced mushrooms

Griddle or grill the trout and langoustines on a high heat until the trout is almost cooked through (I like it a little pink in the middle but cook for longer if you like) and the langoustines turn from black to pink.

To serve the Asian Style Dish

Drizzle a little chili oil over the fish and prawns and some oyster sauce over the vegetables and top with finely shredded spring onion.

Drizzle a little olive oil and lemon juice over the fish, prawns and vegetables.

Easy, healthy, fairly quick to prepare and cook, and everyone is happy!

Skating on Thin Ice – Skate Wing with Prawns

Well, with my track record of falling into holes, walking into lamp posts and generally bumping into things, it´s probably a good thing that there are no local ice rinks for me to run amok in!

Best to stick to Skate (ray) of the edible variety.  Here´s a super simple dish, which is quick to cook if the skate is already prepared. If not, check out this “how to” post. Aside from using the biggest frying pan you can get your hands on, it´s all plain sailing. Or skating…

Ingredients (per person)

  • 1 whole skate wing (or half if it´s as enormous as the one I bought)
  • Half a cup of raw peeled prawns (or you can use cooked)
  • Flour for dusting
  • Salt & Pepper
  • Lemon
  • One clove of crushed garlic
  • Olive oil and butter for frying (or you can use just oil)

Dust the skate wing in seasoned flour and fry gently on both sides until lightly browned. Remove and keep warm while you fry the garlic and prawns until the prawns are cooked through and pink (if raw) or just warmed through if already cooked.

Squeeze a little lemon juice into the pan with the prawns and garlic and the oil/butter then pour over the skate to serve. Easier than a triple salchow. Whatever that is.

Scallops Pil Pil

When we´re Up the Mountain, we enjoy fresh fish from the coast several times a week from Fish Man. When we´re in England we are based on the south coast, so benefit from a wonderful local fishmonger or a trip to The Stade (the fisherman´s beach) in nearby Hastings where we can choose from an incredible range of fresh fish.

Recently (before heading back to Spain) we treated ourselves to some fresh scallops with their roe and decided to cook them Gambas Pil Pil style with plenty of fresh crusty bread to mop up those delicious spicy, garlicky juices.

Normally I´d cook this in a terracotta bowl which goes onto the stove top but foolishly hadn´t taken any to England with me. No problem, I used a small frying pan!

Ingredients to serve 2 people

  • About 4 – 6 tablespoons of olive oil
  • 4 fat cloves of garlic peeled and thinly sliced
  • 1 or 2 dried birds eye chillies
  • About a level teaspoon of hot pimentón (or chilli powder)
  • Sea salt
  • 6-8 fresh scallops

Put all the ingredients except the scallops into a pan and start on a gentle heat “poaching” the garlic for 2-3 minutes. Now turn it up and when it starts to sizzle, gently drop in the scallops and cook for a further 1-2 minutes until the scallops are cooked through (this will depend on how thick your scallops are).

Serve sizzling hot and be prepared for lots of smacking of lips and licking of fingers.

Prawn and Mushroom Quiche

Now, I know quiche isn´t remotely Spanish, but just think of it as a tortilla in a pastry case!  I have introduced Big Man to quiche over the last few years and it has become a big favourite.

It´s also an easy dish for me to prepare right now with just a few pots and pans at my disposal and (yes, I confess) I used ready made pastry this time.

Remember Clara´s Pastry for my mince pies? Well, here it is again, it´s a very versatile and tasty pastry. And when I´m not being so lazy or covered in dust, I´ll make my own again!

Ingredients for the pastry

  • 200g plain flour
  • Pinch of Salt
  • 50g each of cold butter and lard
  • One egg, beaten
  • Milk

Rub the fat into the flour and salt until it resembles fine breadcrumbs or pulse in a food processor.  Using a broad knife, work the egg into the flour.  Start to gently bring the pastry together with your hands.  You will probably need to add a very little milk but add drops rather than slugs.  Do not knead or overwork the pastry.

Now wrap in plastic and leave to rest in the fridge until you are ready to use it, but bring it up to room temperature first.

Roll it out on a well floured surface and place into your tin, prick the base with a fork and then fill with baking beans or pulses placed on top of greaseproof paper. Trim off any excess and bake at 180ºC for 15 minutes, or until it just starts to brown.

For the filling

  • 5 eggs and 100 ml of single cream beaten together
  • A cup of peeled cooked prawns
  • A cup of thinly sliced mushrooms (lightly sautéed first)
  • Seasoning

Mix all the ingredients together, if your tin is particularly large, add a drop more cream or milk.  Pour into the pastry base and bake for about 25 minutes at 180ºC or until the centre is set.

Remove from oven and eat hot or cold.

Another way with runner beans – Spicy Beans with Prawns and Potatoes

Yes, it´s that runner bean time of year here Up the Mountain. We´re picking them daily, freezing some, giving some away and of course, eating plenty.

This was a light supper dish that was quickly pulled together as I had already blanched the beans and had some cooked potatoes in the fridge (a staple in our house for potato based salads) and some cooked prawns. If you don´t have these ready though, it´s not the work of hours to blanch some beans and boil some potatoes before throwing in raw prawns to cook through at the end.

Ingredients (Serves 2 as a light meal)

  • About 500g of sliced, blanched runner beans
  • 2 medium cooked and peeled potatoes, cut into small chunks
  • About a cup of cooked, peeled prawns
  • 1 teaspoon of grated fresh ginger
  • 2 fat cloves of crushed garlic
  • ½ teaspoon of ground cumin
  • ½-1 teaspoon of hot or sweet pimentón (or chili powder)
  • Olive (or vegetable) oil
  • Salt

Into a deep, heavy frying pan pour a few tablespoons of oil for frying and quickly fry the potatoes until they start to brown over a high heat.  Reduce the heat to low and add the ginger, garlic, cumin and pimentón and fry gently until the garlic and ginger have softened.  Now add the beans and continue to fry gently until they have cooked through.  Add the prawns (I chopped mine as they were quite large) and taste. Add salt if necessary. This would be great with some finely chopped coriander but I didn´t have any. Serve hot with crusty bread or try this beautiful recipe for pita bread from Tandy over at Lavender and Lime.

So…you want to make a Paella?

Finally, I thought it was about time I put pen to paper (or fingers to keyboard) for this classic recipe. I went to a local expert, he´s called “Chef Colorin” and he makes the paellas for all the local fiestas. Be warned, there are LOADS of photos in this post, but I hope you enjoy seeing the process.

Of course, he wasn´t going to just  sit down with me over a glass of wine and give me the recipe. Much better than that, I was going to join in with the cooking. Fantastic, I thought, how many are we cooking for then Chef? Oh, not too many he told me, only 420 on Sunday. Get there about 11am he said, and we´ll show you the ropes.

Not one to balk at such a challenge, and I even wore the exceedingly unflattering hat (yes, I´ll show you the photos). It was one of the hottest and windiest days we´ve had for a while, so we couldn´t even put a shelter up for shade. Hey ho, the show must go on, and of course, it did.

We used 3 Paella pans which make 140 portions each. Feel free to adapt for smaller groups! The ingredients below are per 140 person pan.

Start with your base stock which is made in large 50 litre pots, sheltered from the wind today with a clever little device which goes round the base of the gas ring.

Into each pot goes 800g of stock cubes to 50 litres of water (at home, you´d probably use home made chicken or fish stock), 5 bay leaves, 2 tablespoons of sweet pimentón, 200cl of dry white wine, 500g each of chopped peppers and garlic, 1kg of monkfish, assorted fish bones, 400g of chopped tomato and 4 kilos of prawns with their shells on. Bring to the boil then simmer for about 20 minutes or so. Chef added 14 sachets of paella food colouring to the mix but at home we´d use saffron or turmeric.

Strain out the prawns, fish etc.

Then, wearing your glamorous outfit, count out 280 prawns (that´s so that everyone gets at least 2 each) and pull any meaty bits of fish off the bones. First come, first served on any extra prawns!

Is your fire ready to cook? I hope so, we´re going to begin.

Heat 3 litres of olive oil in your pan and add 8 kilos of chopped pork and season with salt to taste. Fry gently for a few minutes.

Now add a couple of heaped tablespoons of sweet pimentón.

Next comes a kilo each of red and green peppers and 250g of chopped garlic. Don´t forget the seafood – 2 kilos of chopped squid.

Stir gently while making silly faces.

Time to add 4 kilos of chopped tomatoes and a kilo of sliced roasted peppers.

Open the bags of rice carefully – 14kg for 140 people, which translates to 100g per person at home.

Such concentration – I take my work very seriously!

Add to the pan.

Stir gently into the sofrito with your giant paddle.

Now add30 litres of stock (which is 2 litres of stock per kilo of rice, plus a little extra – at home you would add 200cl plus a dash per 100g of rice…see, not so complicated!).

Keep that rice moving without burning your legs on the fire underneath the pan.

The professionals in action…

It´s much harder than it looks! (And don´t forget to taste).

Remove from the heat and sprinkle over those prawns and the fish you set aside.

Phew, job done. Time to show off an enormous loaf of bread baked by a local baker.

While we´re eating, you can enjoy a vaguely arty shot of a clean paella pan (don´t forget to oil it after washing up).

I do have to admit though, I was quite glad to take my “uniform” off and sit down in the shade of an olive tree with a large glass of tinto de verano.

Salpicón De Mariscos – Seafood Salad

So many colours!

A typical tapas here which offers the best from the sea and the best from the salad garden is a Salpicón de Mariscos. We also enjoy it as a light lunch or supper dish or a starter.  Of course, there are many ways of making it, depending on what you have available.  Avocado? Yes, put some in. Don´t like cucumber? Leave it out.

Here´s my version which I also made a lemon vinaigrette for.  Typically though it would just be dressed with salt, white wine vinegar and olive oil.

Serves four as a starter or two as a main course.

Vegetables (all to be chopped into roughly 1cm squares)

  • Two long thin green peppers or one green bell pepper
  • Half a large red bell pepper
  • One medium red onion (or a sweet white onion). Tip…if you thinly slice and then leave in iced water for about 30 minutes and then drain before adding to your salad, it will remove any harshness of flavour
  • One small cucumber, partly peeled
  • Two carrots peeled and cut into thin strips with a peeler (this is not typical, but I enjoy the crunch and colour) and then cut into smaller pieces
  • One large salad tomato (add this just before serving)
  • Two heaped tablespoons of chopped flat leaf parsley

Seafood

  • A mixture of cooked prawns, octopus, mussels – I had about 2 cups in total

Dressing

  • One clove of crushed garlic, half the juice of a lemon, olive oil (you want 3 measures of oil to one of lemon), salt, pepper, half a teaspoon of sugar, a quarter teaspoon of English mustard powder (or use half a teaspoon of made up mustard)

Also – the grated zest of one lemon

Method

Mix together the salad and seafood.  If you are using tomato (and/or avocado) add just before serving.

Shake the dressing ingredients in a jar, taste and adjust seasoning to your preference.  Pour over the salad and mix gently.

This benefits from sitting somewhere cool  (but not cold) for at least an hour before eating. Otherwise you can make ahead, store in the fridge and then remove it an hour before serving.  Add the tomatoes and/or avocado if using, grate over the lemon zest and give it one final stir.

Have plenty of crusty bread to hand to mop up all those lovely lemony juices.
